Intro

Oh hi! So this is what's going to happen.. I'm starting this "What's for dinner tonight" Blog because I think it will be a great way to share my recipes and keep them to reference back to. Also, when I'm in a pickle.... Mmm pickles...ANYWAYS! When I can't think of anything to make I can get ideas from here.. If anyone ever has any ideas of what I should make leave me a comment! Let me know if you decide to make any of them as well!!

p.s It's not going to be a every night thing, simply because I work nights sometimes. So check back often. OFTEN!!!

What's In The Fridge Mexican Bean Chiloup


OOook...SO for tonight I had to make something quick and with things I had around the house... This is what I came up with... PS you can't screw up mexican flavors... It's just NOT possible..


So you'll need:


1 onion chopped

2 Cloves garlic grated

1 Zucchini

1/2 Bunch of Cilantro

1 Avacado

1 Lime (wedged)

3-4 Green onions

2 Handfulls of Spinach

1 can of each: Black eyed Peas, Black beans, Corn, Diced tomatoes, Jalapenos

1 Tbsp Cumin

1 Tbsp Chili Powder

1 1/2 C Vegi stock


Some sour cream and Shredded Cheese


Also, one package of tortillas or a bag of tortilla chips.


-Sautee the onion and garlic in olive oil (maybe like, 2 tbsp?) until onions are soft.

-Add cilantro, cumin and chili powder.

- Add everything else except: Green onions, avacado, lime, sour cream and cheese.

-Cook til zucchini is soft....i dunno... like....10 mins?


If you are going to make your own chips like im going to.. just cut up the tortillas into strips and put them on a cookie sheet, drizzle with olive oil and bake in a 350* oven til crispy... I dont know exactly how long that takes so just watch them..


THEN! Put the Chili/Soup into bowls and top with diced avacado, green onions, cheese, juice from a lime wedge and sour cream. Oh and the chips that you made too... EAT

Butter Chicken!!

Anyways it was given to Corby from his boss Ian. Who got it from his wife, who got it from HER mom who lives in India.. They also gave us a Tandoori chicken recipe that we will try out soon.

This was super easy though!! and frickin delish!

I didn't make the naan bread, but it was still yummy :)

NUTS!!!



OOok... SO you need:

1 Egg white, whipped!
5 c of your favorite nuts mix
1 c Dried cranberries
1/2 Dried apricots
1/2 c Splenda brown sugar mix
1 1/2 Tbsp Cinnamon

*Pre-heat oven to 350
*In a large bowl, whip up your egg white.
*Add all ingredients
*Mix until everything is coated
*Put in a greased 9 x 13 pan
*Bake for 10 mins, Stir the nuts then bake for another 10 mins.
*Take out of the oven and let cool 5-10 mins, then go and stir them again to break them apart, they will stick together if you let them cool all the way. But, if you like that, then go ahead.

*EAT THEM! and make sure to keep the FAR away from Corby if you want ANY at all. Seriously. :)

Cinco de Mayo

Chimichangas, guacamole and sangria



Chimichangas

2/3 cup picante sauce or your favorite salsa
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crushed
1 1/2 cups cooked chicken, chopped
2 cup shredded cheddar cheese
4 green onions, chopped with some tops (about 1/2 cup)
1 can Black Beans
1 can Corn
1 small can of Jalapenos
1/2 c chopped cilantro

10 (8 inch) flour tortillas
2 tablespoons margarine, melted
shredded cheddar cheese, for serving
chopped green onion, for serving

1-Mix chicken, picante sauce or salsa, cumin, oregano, beans, corn, cilantro, cheese and gr. onion.

2-Place about 1/4 cup of the chicken mixture in the center of each tortilla.
3-Fold opposite sides over filling.
4-Roll up from bottom and place seam-side down on a baking sheet.
5-Brush with melted margarine.
6-Bake at 400°F for 25 minutes or until golden.
7-Garnish with additional cheese and green onion and serve salsa on the side
picante sauce, for serving

Guacamole

Combine all ingredients:

2 Avacados
1 Tomato
2 Green onions
1/4 c chopped Cilantro
2 cloves of garlic minced
Juice from 1 lemon
S+P

Sangria

Combine all ingredients in a pitcher:

1 Mango
1 lime
1 orange
1 c raspberries
2 cans gingerale
1/2 bottle or more of red wine.
